Prostanthera incisa (Native Thyme) is an aromatic shrub with small, fragrant leaves and purple flowers, growing up to 1.5 meters tall. It is prized for its aromatic foliage and ornamental appeal in garden beds and containers. In addition to its horticultural value, Native Thyme has a historical role in Indigenous Australian culture as bush tucker. Aboriginal communities would use the leaves of the plant for cooking, particularly in preparing meats and stews. The aromatic leaves were often used to infuse a distinct flavor into food, enhancing the taste of dishes with their herbal, thyme-like fragrance. It was also sometimes used to make teas and infusions.
